Chickpea Mediterranean Bonanza
Happy May to all you foodies! This is so simple to make but it delivers such a fresh punch of umami flavors that you won't be able to drop your fork or possibly start eating with your hands! Not only will this deliver over 15 grams of protein and 6 grams of fiber but it's very low in calories and sugar. What better way to go meatless and on the go than a packed salad that will keep you full and energized! Smacznego :)
the goods:
1 can or 1lb of dried garbanzo (chickpea) beans
2 diced tomatos
handful of chopped italian parsley
1 pomegranate
1 minced garlic clove
juice of 1 lemon
2 tbl of olive oil
1 tbl of honey
1 tbl of paprika
salt
pepper
Rinse the beans out of the can under cold water. Mix the first 5 ingredients in a bowl to incorporate. Mix the last 4 ingredients in a bowl making sure to slowly drizzle in olive oil so that it blends right in. Season to your taste with salt and pepper. Eat.
